Virtual Cookie Exchange-Christmas Sandwich Cremes
Staci Troilo is hosting her fifth annual virtual cookie exchange on her blog. Last year she had several excellent recipes, and I added some new and delicious recipes to my collection.

This year I am sharing a recipe that my kids ask for every year. A family favorite that goes fast on my cookie tray.
Before starting any recipe, I always read the recipe in its entirety to ensure I have the necessary equipment and ingredients. This saves time and keeps me from having to go to the store while baking.

Cookie
1 Cup Butter Softened (No Substitutes)
1/3 Cup Whipping. Cream
2 Cups Flour
Sugar (for coating cookies)
Filling
1/2 Cup Butter Softened (No Substitutes)
1-1/2 Cup Powdered Sugar
2 Tsp. Vanilla
Food Coloring
Let’s Make It
Cookie
In a mixing bowl, combine butter, whipping cream and flour, mix well. Divide dough into thirds, cover with plastic wrap, and refrigerate for 2 hours.

Preheat oven to 375. Add sugar to a small bowl and set aside (I start with 1/4 cup and add more if needed).
Take out one portion of dough and bring to room temperature, about 15 minutes. Roll out on a lightly floured surface to a 1/8-inch thickness. Cut with a 1-1/2-inch round cookie cutter (I use a shot glass). Coat both sides of each cookie the sugar. Place on a parchment lined (or ungreased) baking sheet. Prick each cookie with a fork several times. Continue the process until you have finished all three portions of dough and used the the dough scraps after cutting. Bake at 375 for 7-9 minutes or until set. Cool on Wire racks.

Filling
In a small bowl, cream butter and sugar. Add Vanilla. Tint with food coloring.

Spread about 1 teaspoon of filling over the half of the cookies. Top with the remaining cookies.

Notes:
- You can you any extract of choice, my family prefers vanilla.
- If you want multiple colors of your sandwich cremes, divide filling and tint each separately.
- Do not double recipe.

I remember making these with Mom. Actually, I remember Mom complaining about them and sticking me with the worst of the work. She was a riot in the kitchen. I miss her. So nice to see these here. And who doesn’t like a cookie that can be colored to suit an occasion?

These look delicious. I’d love to try other flavors, too. Citrus might be delicious. I do love vanilla, though!
I have done lemon, they were good. Maybe for Christmas, peppermint, or gingerbread, rum, or cranberry.
